★ Beat softened butter and pour chilled syrup into a tablespoon with a thin stream. Add vanillin, if the cake is for adults, you can add a little cognac. The cream is light, airy. Oil does not exfoliate.
★ Set aside 2/3 of the cream, add cocoa to the remainder.
★ Putting the cake together. The edges can be trimmed a little, only very carefully as the cakes are fragile and easily crumble. Lubricate the lower cake with butter cream, leaving a little for decoration.
★ Lubricate the second cake with apple jam. This is very important, the jam gives sourness and aroma.
