Chicken Delicious Lunch For Christmas Party

Chicken Lo Mein offers delicious lunch, dinner or late night snacks. If you want a thicker sauce, add 2 teaspoons of cornstarch to the sauce and add to the pot.

Traditionally, this dish is made with thin noodles (available on the Asian market).

Pasta or pasta can be substituted, or thicker noodles can be used if needed. This chicken
fillet pasta recipe serves 2-4.

  • 1/2 pound chicken breast (boneless, skinless)
  • 1/2 pound Chinese noodles (very fine or coarse noodles)
  • 1 cup carrots (shredded; about 1 carrot)
  • 1 can / 8 oz straw mushrooms
  • 3 tablespoons vegetable oil (or peanuts
  • Oil for cooking or as needed)
  • 1 teaspoon garlic (chopped)
  • 1/4 teaspoon salt (plus more flavor)
  • Black pepper flavor
  • For marinades:
  • 2 teaspoons
  • Light soy sauce
  • 1 teaspoon rice wine (or dry sherry)
  • 1/4 teaspoon sesame seed oil
  • 1 teaspoon cornstarch
  • sauce:
  • 3/4 cup chicken soup
  • 2 tablespoons plus 1 teaspoon oyster sauce
  • 3/4 teaspoon sugar

How do i do this

1. Cut the chicken into thin strips about 2 inches long. (If chicken is slightly frozen, this is easiest to do). Add light soy sauce, rice wine or sherry, sesame oil and corn starch. Marinate chicken for 20 minutes.

2. While the chicken is marinating, prepare other ingredients: put the sauce ingredients in a bowl and set aside.Boil the noodles until they are cooked (tender but still hard).
This takes about 3 minutes of fresh noodles and 4-5 minutes of dry noodles. Drain, rinse with cold water and drain again.

3. Cut the carrots into thin strips to match the chicken. Rinse the straw mushrooms under running water to remove any "tin" smell. Drain completely.

4. Heat 1 tablespoon of oil, medium to high temperature. Add garlic and fry for a few seconds until fragrant, then add chicken. Stir fry the chicken until it is discolored and is 80% cooked. (If you need more oil, try adding 1 tablespoon of water). Remove the chicken and clean the pan.

5. Heat 2 tablespoons of oil and salt in the pan. Add carrots and mushrooms. Fry for 1 minute, then add chicken. Add noodles and stir to mix other ingredients. Add the sauce to the wok and mix with the other ingredients.

6. Cook for another 2 minutes. If desired, taste and add salt or pepper. heat.
